- 3 cloves garlic, smashed
- 1 tsp cinnamon
- ½ tsp allspice
- 1 tsp ground cumin
- 1 ½ -2 lbs sweet potatoes, peeled and cut into 1 inch chunks
- 3-4 apples, cored, peeled and cut into 1” chunks
- 4 c vegetable stock
- 1 ½ c apple cider
- 1 tbsp butter
- 1 tbsp olive oil
- 2 stalks celery, chopped
- ½ c chopped onion
- 4-8 sprigs fresh thyme
- salt and ground pepper to taste
In large pot heat butter and olive oil. Add the celery, onion and thyme. Season with salt and pepper, stir till onion are tender.
Add the garlic, cinnamon, allspice, and cumin. Stir and cook about 5 min.
Add sweet potatoes and apples, stir to coat with contents of the pot.
Add stock and apple cider and then cover. Simmer for 20-25 min.
In batches carefully puree the contents in or with blender. Taste and season with salt.
Serve warm or chilled.
