- 2 apples peeled, cored and chopped
- 2 pears peeled, cored and chopped
- 1 tsp cinnamon
- ½ tsp ginger
- ½ c chilled butter
- ½ tsp baking soda
- ¾ c sugar
- 2 eggs beaten
- 2 c flour
- 1 tsp baking powder
- ¼ tsp sea salt
- ¾ c raisins
Cut apples and pears into small pieces. Cook on low until soft.
Add the cinnamon and ginger. Mash together.
Cream together the softened butter with sugar adding the eggs.
Mix dry ingredients. Add the raisins to the four, add this to the creamed mixture.
Stir the stewed fruit and combine until all ingredients are mixed. Place into 12 greased muffin tins.
Bake 350 for 18-20 min.
