- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 6 minced garlic cloves
- 1 1/2 tsp cayenne pepper
- 1 lb green beans
- 3 tomatoes diced with juice
- salt and pepper
- 1 1/2 tsp paprika
In a large skillet heat the oil. Add the sliced onion and cook until translucent and softened.
Add the garlic, paprika, and cayenne pepper and cook until fragrant a couple of minutes.
Add the green beans and cook for about 2 min. tossing to coat the beans.
Pour the diced tomatoes and juices into the skillet and bring to a boil.
Reduce to low and simmer covered until the beans are very tender about 40 min. Season with salt and pepper.
