- 1 c fresh corn kernels (2 ears)
- 1 –2 hot peppers seeded ,diced
- 2 tsp olive oil
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped onion
- 2 tbsp fresh lime juice
- ½ tsp sugar
- salt to taste
Cook 2 ears of fresh corn just until tender. Remove the corn from the ear when cool. Mix the corn, peppers, cilantro and onion in a bowl.
Stir in 2 tsp olive oil, and the lime juice, sugar and salt.
Optional: you may choose to grill the peppers and put a char on them for added smoky flavor. Enjoy.
