Fig Bars

  • 8 ounces figs, stems trimmed and coarsely chopped
  • ¼ cup chopped walnuts or pecans
  • 5 1/3 Tbsp sugar
  • 2 Tbsp orange juice or rum
  • 1 Tbsp hot water
  • ¼ cup butter, softened
  • ½ cup brown sugar, packed
  • 1 egg
  • ¾ cup flour
  • ¼ tsp baking soda
  • ¾ cup old fashioned oats


Coat an 8 x 8 pan with cooking spray, or double recipe for 9 x 13.

Combine figs, nuts, sugar, orange juice, and hot water, set aside.  Beat together butter and sugar until creamy.

Add egg and mix until smooth.  Stir in flour and baking soda; blend in oats to make soft dough.  Reserve ½ cup of dough.

With floured fingertips, press thin layer of remaining dough in bottom of prepared pan, firmly pat fig mixture over dough.

Drop reserved dough by teaspoonfuls over top, allowing fig mixture to show between drops.

Bake for 30 minutes or until golden.  Cool.  Drizzle with glaze:  Stir together ¼ cup powdered sugar, 1-2 tsp orange juice or rum until smooth.
