Kohlrabi Carrot Fritters with Avocado Cream Sauce

Ingredients:

  • 2 Kolhrabi
  • 1 carrot
  • 1 egg
  • ¼ tsp salt
  • ¼ tsp cayenne
  • ½ c vegetable oil or grapeseed oil
  • ½ avocado
  • ¼ c plain yogurt
  • ½ lemon
  • ¼ tsp salt

Instructions:

Peel the kohlrabi. Shred the vegetables in a food processor.

Squeeze the shredded veggies in a tea cloth to remove moisture then place in bowl with egg, salt and cayenne. Mix.

Place oil in skillet. Heat to medium high heat. Place small patties of veggie mixture into the oil. Fry to both sides become golden, place on paper towel to drain.

In a small bowl add remainder ingredients and cream. Serve with the fritters.
