Lemon and Thyme Grilled Chicken Breasts

  • 4 chicken breasts
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp chopped thyme leaves
  • 2 stems of green garlic finely chopped
  • 2 lemons
  • 2 tbsp olive oil  or more
  • torn basil or mint leaves as needed


Place chicken breasts between two sheets of plastic wrap and pound to make thin, about ½ in. Place chicken in a ziploc bag.

In a bowl place salt, pepper, thyme, garlic and zest and juice of 1 lemon. Mix in olive oil. Pour over chicken and zip closed.

Refrigerate 1-2 hours. Remove chicken from fridge while you heat your grill or skillet. Remove chicken from marinating bag and place on grill, cooking 3-5 min on each side.
